We understand that preparing homemade meals can be quite exhausting for most people. With a slow cooker, you can enjoy healthy, tasty meals without putting in a lot of effort. It works best for busy households where you can come back from work to enjoy a delicious dinner you did not even strive for! We have put together some of the simplest and most delicious slow cooker recipes for you to try. For most of the recipes, you will only have to prepare the ingredients, shove them in your beloved slow cooker, turn it on and forget it! Come back after hours to find it ready and waiting for you to enjoy it.

Pot Roast

Ingredients:

  • 4 pounds beef roast
  • Salt and pepper to taste
  • 1/3 cups flour and a little extra for coating
  • 3 tbsp olive oil
  • 4 carrots, cut evenly into pieces
  • 3 stalks of celery, cut evenly into pieces
  • 1 onion, cut into pieces
  • 3 cloves of garlic, minced
  • 3 tbsp tomato paste
  • 1 cup wine
  • 3 cups beef stock
  • 2 bay leaves
  • fresh thyme
  • 1/2 tsp allspice powder
  • 1/2 cup chopped parsley leaves

Method:

  1. Sprinkle salt and pepper over the roast and then coat it nicely with flour.
  2. In a large skillet, heat about 2 tbsp of oil and add the roast to it. Cook it for about 8 minutes turning it as required until all the sides turn golden brown.
  3. Transfer the contents of the skillet to your slow cooker and add garlic, celery, onion and carrots to it.
  4. To the empty skillet, add 1 tbsp of oil along with tomato paste and cook it for about a minute while stirring continuously.
  5. Add flour and wine to the skillet while stirring continuously until the mixture thickens.
  6. Now add beef stock, thyme, bay leaves, allspice powder and a little salt and pepper to the skillet. Let it cook for about 4 minutes while stirring until the gravy turns smooth.
  7. Transfer the contents of the skillet to the slow cooker. Turn it on and let it cook on ‘low’ setting for 8 hours or until the contents turn soft.
  8. Take out the roast in a dish and leave it to rest for a few minutes.
  9. Remove the thyme stems and take out the vegetables in a separate dish. Add half of the parsley to the vegetables and toss them with salt and pepper.
  10. Add the remaining parsley to the gravy along with a little salt and pepper.
  11. Slice the roast and place it on a platter with vegetables. Pour a little gravy on top and serve the remaining separately in a bowl.

Mac and Cheese

Ingredients:

  • Cooking spray
  • 8 ounce of elbow macaroni, boiled
  • 12 ounce of evaporated milk
  • 5 cups of whole milk
  • ½ cup melted butter
  • Salt and pepper to taste
  • 2 eggs, beaten
  • 5 cups cheddar cheese, grated
  • Pinch of paprika

Method:

  1. Spray your slow cooker with cooking spray.
  2. Add macaroni, evaporated milk, whole milk, salt, pepper, butter, eggs and 4.5 cups of cheese. Mix well.
  3. Sprinkle the rest of the cheese on top with paprika.
  4. Place the lid and turn the cooker on. Let it cook on ‘low’ for about 3 hours.
  5. Serve hot.

Pulled Turkey Sandwiches

Ingredients:

  • 1 red onion, chopped
  • 4 pounds turkey meat
  • 1 tbsp red chili powder
  • 1 tsp cumin powder
  • Salt and pepper to taste
  • 1/2 cup of ketchup
  • 1/4 cup brown sugar
  • 2 tbsp mustard paste
  • 1 tbsp vinegar
  • Buns

Method:

  1. Cover the base of the slow cooker pot with the onions. 6 quarts slow cooker would be the most suitable size for this recipe.
  2. Sprinkle chili powder, cumin, salt and pepper over the turkey meat and rub it well. Place the meat over the onions.
  3. Mix ketchup, mustard and sugar in a bowl and transfer it to the slow cooker.
  4. Cover the slow cooker and leave it to cook for 5 hours if the setting is ‘low’ and 3 hours if the setting is ‘high’.
  5. Remove the lid. After letting it cool for about 10 minutes, shred the meat and remove the bones.
  6. Add vinegar to the shredded meat and mix. Taste the meat and add more salt and pepper if needed.
  7. You can serve this shredded meat on buns along with coleslaw if you like.

Chocolate Fondue

Ingredients:

  • 1 pound chocolate chips
  • 1 cup cream
  • 1/2 cup of whole milk
  • 1 tsp vanilla extract
  • Pinch of salt
  • 2 tablespoons coffee liqueur
  • Fruit or pound cake to serve it with

Method:

  1. Turn on a 6 quarts slow cooker with the cooking insert on ‘high’.
  2. Add chocolate, heavy cream, whole milk, vanilla extract and salt to the slow cooker and mix well.
  3. Place the lid and let it cook on ‘high’ for about half an hour.
  4. Stir the contents of the cooker, add coffee liqueur and turn the setting to ‘low’.
  5. Serve it with fruits of your liking or pound cake.

Mushroom Barley Risotto

Ingredients:

  • 2 tbsp of olive oil
  • 1 chopped onion
  • Salt and pepper as required
  • 1 pound sliced mushrooms
  • 5 cups barley
  • Fresh thyme
  • 8 ounce of chopped carrots
  • 3 cups vegetable stock
  • 1 ounce grated Parmesan cheese
  • 1 tbsp vinegar
  • 1/4 cup of chopped parsley

Method:

  1. Brown the onion lightly in a large pan using olive oil.
  2. Add salt and pepper along with mushrooms and cook while stirring until they have browned.
  3. Add barley along with thyme to the pan. Cook while stirring for a further two minutes until barley turns slightly golden in color.
  4. Transfer the contents of the pot to your slow cooker. Include carrots, stock, 1.5 cup water along with salt.
  5. Turn it on and let it cook on ‘high’ for 3 hours.
  6. Remove thyme and add cheese, vinegar, salt and pepper to the slow cooker. Garnish with fresh parsley.
